Ingredients
  

  • 4 slices tomato basil bread or 2 sandwich rolls
  • 4 tablespoons hummus 2 tablespoons per sandwich
  • ¼ cup crumbled feta cheese
  • ½ cup cucumber thinly sliced
  • ½ cup tomato thinly sliced
  • ¼ cup red onion thinly sliced
  • 1 cup mixed greens or baby spinach
  • 2 tablespoons roasted red peppers sliced (optional)
  • Salt and black pepper to taste
  • 1 teaspoon olive oil optional, for toasting

Method
 

  1. Slice the cucumber, tomato, and red onion thin and even. Lay the tomato and cucumber slices on a paper towel and sprinkle lightly with salt. Let them sit for five minutes. This helps remove extra moisture so your bread does not get soggy later. Pat them dry before building the sandwich.
  2. Cut your tomato basil bread into four slices or open your rolls. If you want a warm sandwich, toast the bread lightly in a skillet or panini press for about two minutes on each side.
  3. Spread two tablespoons of hummus on each inside slice of bread. Cover the bread from edge to edge so each bite has hummus, not just the middle.
  4. Place a small handful of mixed greens or spinach on top of the hummus. This creates a barrier between the bread and the juicier vegetables, helping to keep everything from getting mushy.
  5. Layer the cucumber, tomato, and red onion evenly over the greens. If using roasted red peppers, add them here. Sprinkle crumbled feta cheese over the vegetables. Add a light crack of black pepper for extra flavor.
  6. Top the sandwich with the second slice of bread, hummus side down. Press down gently with your palm to help the layers stick together. Cut the sandwich in half with a sharp bread knife for a clean edge. Serve right away for the freshest crunch.
